THE REDEMPTOPM OF ALTHALUS by David & Leigh Edding is my absolute favorite stand-alone fantasy novel. I've heard it at least six times in the last 10 years or so. Utterly wonderful characters and David's writing is one of the best.

Gotta give a nod to Tad Williams' "The War of the Flowers" as an epic standalone too.

This list cannot be complete without Brandon Sanderson's breakout novel, ELANTRIS. It's a masterpiece.
